Ingredients
Scale
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Powdered sugar (for dusting)
Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg, lemon zest, and fresh lemon juice until well combined.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a dough. Scoop tablespoon-sized portions of dough and roll into balls.
Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes. Then, transfer them to a wire rack to cool completely. Once cooled, dust the cookies with powdered sugar.
