  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeño pepper, seeded and chopped
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 8 ounces Cheddar cheese, shredded
  • 1 (10-ounce) can diced tomatoes with green chiles, drained
  • 1 (16-ounce) can refrigerated biscuits
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, brown the ground beef over medium heat and drain any excess fat.
  3. Add salt, pepper, garlic powder, onion powder, chili powder, and paprika to the beef. Stir well. Add chopped onion, red bell pepper, and jalapeño, cooking until the vegetables are tender.
  4. In a bowl, combine sour cream, mayonnaise, and half of the shredded Cheddar cheese. Mix well.
  5. Spread the beef mixture evenly in the prepared baking dish. Top with the sour cream mixture and sprinkle the diced tomatoes with green chiles over the top.
  6. Arrange the refrigerated biscuits over the casserole and sprinkle the remaining Cheddar cheese on top.
  7. Bake in the preheated oven for 30-35 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.
  8. Allow the casserole to cool for a few minutes before serving.
