  • 4 cups powdered sugar
  • 2 tablespoons strong brewed coffee, cooled (for buttercream)

  • 1 teaspoon vanilla extract (for buttercream)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the coffee and milk. Begin and end with the dry ingredients. Mix until just combined.
  6. Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
