500g potatoes, peeled and chopped
2 egg yolks
150g breadcrumbs
100g grated cheese (optional)
100g flour
50g butter
2 eggs, beaten
Salt and pepper to taste

Instructions
Boil the peeled and chopped potatoes until tender. Drain and mash them with butter until smooth.
Mix in the egg yolks, salt, pepper, and grated cheese if desired. Allow the mixture to cool slightly.
Form the potato mixture into small croquettes. Roll each croquette in flour, dip into the beaten eggs, and then coat with breadcrumbs.
Heat oil in a frying pan over medium-high heat. Fry the croquettes in the hot oil until they are golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
