  • 2 sticks unsalted butter, softened
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup confectioner's sugar, sifted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon salt
  • 2 cups chopped pecans
  • 1/2 cup granulated sugar (for decoration)

Instructions

  1. Preheat oven to 325°F (165°C).
  2. In a large bowl, cream together the softened butter, vegetable oil, 1 cup granulated sugar, and sifted confectioner's sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the all-purpose flour, baking soda, cream of tartar, and salt.
  5. Stir the dry ingredients into the creamed mixture until well combined. Mix in the chopped pecans.
  6. Roll the dough into 1-inch balls and roll each ball in the remaining 1/2 cup granulated sugar.
  7. Place the cookies 2 inches apart onto ungreased cookie sheets. Bake for 10 to 12 minutes in the preheated oven, or until the edges are golden.
  8. Remove from the cookie sheets and cool the cookies on wire racks.
