3 pounds chicken
3 carrots, chopped
3 stalks celery, chopped
1 onion, chopped
Salt and pepper to taste
1 teaspoon chicken bouillon (optional)

Instructions
In a large pot, add chicken, carrots, celery, and onion. Pour in enough water to cover the ingredients. Bring to a boil, then reduce the heat and simmer until the chicken is fully cooked, about 30-40 minutes.
Remove the chicken from the pot and let it cool slightly. Discard the skin and bones, then chop the meat into bite-sized pieces.
Strain the vegetables from the pot, reserving the broth. Chop the vegetables and return them along with the chicken to the pot.
If using, add chicken bouillon to the pot. Season with salt and pepper to taste. Heat the soup through, stirring occasionally, until everything is hot and well combined.
