Caramel Corn is a delightful treat made from freshly popped popcorn coated in a rich caramel sauce.   • 7 quarts plain popped popcorn
  • 2 cups brown sugar
  • 1 cup margarine
  • 2 cups dry roasted peanuts (optional)
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup light corn syrup
  • 1 teaspoon salt

Instructions

  1. Prepare Popcorn: Place the popped popcorn into two shallow greased baking pans. If using, mix in the dry roasted peanuts. Set aside.
  2. Preheat Oven: Set your oven to 250°F (120°C).
  3. Make Caramel Sauce: In a saucepan, combine the brown sugar, corn syrup, margarine, and salt. Bring to a boil over medium heat, stirring to blend. Once boiling, continue to boil for 5 minutes, stirring constantly.
  4. Add Flavorings: Remove the saucepan from heat. Stir in the baking soda and vanilla extract. The mixture will become light and foamy.
  5. Coat Popcorn: Immediately pour the caramel mixture over the popcorn in the pans. Stir to coat, though it’s fine if some pieces remain less coated.
  6. Bake: Bake in the preheated oven for 1 hour, stirring every 15 minutes to ensure even coating.
  7. Cool and Store: Line your countertop with wax paper. Spread the caramel-coated popcorn onto the wax paper and separate the pieces. Allow to cool completely. Store in airtight containers or resealable bags.
