Beef Rissoles are a delicious and hearty dish made with minced beef and a blend of fresh vegetables. These flavorful patties are perfect for a satisfying meal any night of the week, served with peas and mashed potatoes.

Ingredients

Scale
  • 50g panko breadcrumbs
  • 1 courgette, trimmed and grated
  • 1 carrot, grated
  • 1 onion, grated
  • 1 egg, beaten
  • 400g beef mince
  • 1 garlic clove, crushed or finely grated
  • 2 tsp dried mixed herbs
  • 1 tsp Worcestershire sauce
  • 2 tsp vegetable oil

Instructions

  1. In a large bowl, combine the grated onion, panko breadcrumbs, grated courgette, grated carrot, beef mince, beaten egg, crushed garlic, dried mixed herbs, Worcestershire sauce, and 2 tsp each of salt and pepper. Mix thoroughly using your hands.
  2. Form the mixture into 14-16 balls, then flatten them into small burger-like patties. Chill the patties for 15 minutes if time permits.
  3. Heat the vegetable oil in a frying pan over medium-low heat. Fry the rissoles for 3-4 minutes on one side, then flip and cook for an additional 3-4 minutes until cooked through.
  4. Serve the rissoles hot with a side of peas and mashed potatoes, if desired.
