  • 1 pound dried split peas
  • 8 cups water
  • 1 ham bone
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse split peas under cold water and drain.
  2. In a large pot, combine split peas, water, and ham bone. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour.
  3. Remove ham bone from the pot and set aside to cool. Remove any meat from the bone and chop it into small pieces.
  4. Return the chopped ham to the pot. Add onions, garlic, carrots, celery, basil, and oregano. Season with salt and pepper to taste.
  5. Cover and simmer for an additional 30-40 minutes, or until vegetables are tender and peas are soft.
  6. Remove from heat and let cool slightly before serving.
