1 1/2 pounds large shrimp, peeled and deveined
2 bell peppers (1 red, 1 yellow), thinly sliced
1 large red onion, thinly sliced
4 cloves garlic, minced
2 tablespoons olive oil
Juice of 2 limes
1/4 cup chopped fresh cilantro
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
Salt and freshly ground black pepper, to taste
Tortillas, for serving
Instructions
Preheat your grill to medium-high heat.
In a large bowl, mix together shrimp, bell peppers, red onion, garlic, olive oil, chili powder, ground cumin, garlic powder, salt, pepper, lime juice, and cilantro. Toss until well coated.
Tear off four large pieces of heavy-duty foil. Divide the shrimp and vegetable mixture evenly among the foil pieces. Fold up the sides and seal each packet tightly.
Place the foil packets on the grill. Cook for 10-12 minutes, or until the shrimp are pink and cooked through, and the vegetables are tender.
Carefully open the foil packets and serve the contents with warm tortillas.
