  • 4 pounds potatoes, peeled
  • 1 pound ground beef
  • 1 onion, finely diced
  • Salt and pepper, to taste
  • 8 ounces cheddar cheese, shredded
  • 1 (10.75-oz) can condensed Cheddar Cheese soup
  • 1 (12-oz) can evaporated milk
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 13×9-inch baking dish with cooking spray.
  2. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and crumbled. Season with salt and pepper. Drain any excess fat and set aside.
  3. Slice the potatoes thinly (less than 1/4 inch thick). Arrange a layer of potato slices on the bottom of the prepared baking dish. Sprinkle lightly with salt and pepper.
  4. Add 1/4 of the beef mixture over the potatoes, then sprinkle 1/4 of the shredded cheese on top. Repeat this process three more times, creating layers.
  5. In a medium bowl, whisk together the condensed Cheddar Cheese soup, evaporated milk, regular milk, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper until smooth.
  6. Pour the soup mixture evenly over the layered potatoes, beef, and cheese in the baking dish.
  7. Cover the dish tightly with aluminum foil and bake in the preheated oven for 1 hour. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
  8. Let the casserole cool for a few minutes before serving.
