  • 1 pound ground lamb
  • 1/4 cup minced onion
  • 3 cloves garlic, minced
  • 1 large egg
  • 1/2 cup finely crumbled feta cheese
  • 1 teaspoon Greek seasoning
  • 1/2 teaspoon salt
  • 1 to 2 cloves garlic, minced or pressed
  • 1/4 teaspoon salt, to taste
  • 1/2 European cucumber, peeled, grated, drained
  • 1 cup plain yogurt, drained
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh dill
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 2 cups cooked rice
  • Juice of one half lemon
  • 1 cup tomatoes, diced
  • 1 cup diced cucumber, drained
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt, to taste

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with aluminum foil or parchment paper. Mix ground lamb, minced onion, minced garlic, egg, crumbled feta cheese, Greek seasoning, and salt in a large bowl. Form into meatballs and place on prepared baking sheet. Bake for 10-14 minutes until browned and cooked through.
  2. Mash garlic with salt on a cutting board using the back of a fork. Combine garlic paste, drained cucumber, yogurt, mint, dill, black pepper, and olive oil in a medium mixing bowl. Stir well and adjust seasoning.
  3. Mix cooked rice with lemon juice and salt in a medium mixing bowl; adjust seasoning as needed.
  4. Combine tomatoes, diced cucumber, olive oil, and salt in a small mixing bowl. Stir gently and adjust seasoning.
  5. Divide lemon rice among bowls, top with meatballs, tzatziki, and cucumber & tomato salad. Add garnishes as desired.
