These Guinness Beef Sliders are a delightful combination of tender roast beef, sautéed mushrooms and onions, and melted Swiss cheese, all drizzled with a rich Guinness glaze. Perfect for entertaining or a satisfying meal any day of the week.

  • ¾ pound sliced roast beef
  • 1 tablespoon butter
  • 6 slices Swiss cheese
  • ½ Vidalia onion, sliced
  • ¼ cup Guinness beer
  • 1 package sandwich rolls
  • 8 ounces sliced mushrooms
  • 1 bottle Guinness beer
  • 1 stick butter
  • ¼ cup brown sugar
  • 1 tablespoon dried mustard
  • 1 teaspoon onion powder
  • 2 cloves garlic, minced

Instructions

  1. Melt 1 tablespoon of butter in a medium skillet over medium-high heat. Add the sliced mushrooms, onions, and ¼ cup of Guinness beer. Sauté until the liquid is absorbed and the vegetables are tender. Set aside.
  2. In a medium saucepan, combine 1 bottle of Guinness beer, 1 stick of butter, ¼ cup of brown sugar, 1 tablespoon of dried mustard, 1 teaspoon of onion powder, and 2 minced garlic cloves. Bring the mixture to a boil, then reduce the heat and simmer until thickened and reduced by half.
  3. Preheat your oven to 350°F (175°C). Slice the sandwich rolls in half horizontally. Layer each roll with sliced roast beef, sautéed mushrooms and onions, and a slice of Swiss cheese. Place the top half of the rolls over the fillings.
  4. Place the assembled sliders in a baking dish. Pour the prepared Guinness glaze evenly over the sliders. Bake, uncovered, for 30 minutes or until the cheese is melted and the sliders are heated through.
  5. Serve the sliders hot and enjoy the rich, savory flavors.
