  • 8 bone-in chicken thighs
  • ⅓ cup extra-virgin olive oil
  • ¼ cup lemon juice
  • 4 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. In a small bowl, combine olive oil, lemon juice, minced garlic, dried oregano, dried thyme, Dijon mustard, kosher salt, and freshly ground black pepper. Stir well to mix.
  2. Place the chicken thighs in a large bowl and pour the marinade over them. Ensure all chicken pieces are evenly coated. Marinate in the refrigerator for 1 to 2 hours, or up to 8 hours for maximum flavor.
  3. Preheat the oven to 350°F (180°C). Transfer the marinated chicken thighs to a baking dish, pouring any remaining marinade over them.
  4. Bake in the preheated oven for 40 to 45 minutes, or until the chicken is fully cooked and reaches an internal temperature of 175°F (80°C) when tested with an instant-read thermometer. Optionally, baste the chicken with the pan juices a few times during baking. For crispier skin, switch on the top oven broiler during the last 2 to 3 minutes of cooking.
