  • Nonstick cooking spray
  • 1½ cups sugar
  • 1 can pineapple, in juice, drained
  • 1 can peaches, in juice, drained
  • 2 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ cup unsalted butter
  • 1 cup sweetened coconut flakes
  • ¾ cup brown sugar
  • ½ cup evaporated milk

Instructions

  1. Preheat the oven to 325F and spray a 9-by-13-inch baking dish with nonstick cooking spray.
  2. In a large mixing bowl, combine the sugar, pineapple, peaches, eggs, flour, and baking soda and stir to mix well.
  3. Transfer the cake batter to the prepared baking dish.
  4. Bake for 50 to 60 minutes, until the cake is cooked through.
  5. While the cake is baking, make the frosting.
  6. In a medium saucepan over medium-high heat, stir together the butter, coconut flakes, brown sugar, and evaporated milk.
  7. Cook, stirring, for about two minutes, until the sauce is smooth and thickened.
  8. Remove the cake from the oven, and immediately pour the hot frosting over the top.
  9. Let cool to room temperature before serving.
