1 whole chicken, thawed and cleaned
½ cup carrots, celery, and onion (optional)
Water to cover the chicken
1 cup all-purpose flour
2 heaping tablespoons vegetable shortening
½ cup hot water
½ cup plus 2 tablespoons all-purpose flour (for dumplings)
2 large chicken bouillon cubes
1 tablespoon butter
¼ cup water mixed with 2 tablespoons flour (slurry)
Salt and pepper, to taste
Instructions
Place the chicken and optional veggies in a large stockpot. Cover with water. Bring to a boil, then reduce heat and simmer for 1 hour.
Remove the chicken from the pot and let it cool. Strain the broth to remove solids and return the liquid to the pot.
Once cool, remove the skin and cut the chicken into bite-sized pieces.
Add the chicken pieces back into the pot with the broth. Bring to a boil, add bouillon cubes, salt, and pepper.
In a large bowl, mix 1 cup of flour with 1 teaspoon salt. Cut in the vegetable shortening until it resembles small peas.
Stir in ½ cup hot water and ½ cup plus 2 tablespoons of flour until a soft dough forms. Divide into 3 balls and let rest for 10 minutes.
Roll out each dough ball into a thin sheet and cut into strips about 1 inch wide.
Drop dumpling strips into the boiling chicken and broth mixture. Add butter and continue to cook.
Make a slurry by mixing ¼ cup water with 2 tablespoons of flour. Stir until smooth and add to the pot. Cook for an additional 10 minutes until dumplings are fully cooked.
Taste the broth and adjust seasoning with more salt and pepper if needed.
Ladle the hot chicken and dumplings into bowls and serve.
