  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup freshly chopped parsley
  • 1 lb large shrimp, peeled and deveined
  • 12 oz linguine pasta
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Grated Parmesan cheese, for serving
  • Juice of 1 lemon
  • 4 tablespoons unsalted butter
  • Salt and pepper, to taste
  • 1/2 cup dry white wine or chicken broth

Instructions

  1. Boil a large pot of salted water. Cook the linguine according to package instructions until al dente. Drain and set aside.
  2. Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and optional red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook until pink, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, pour in the white wine (or chicken broth) and lemon juice. Bring to a simmer, cooking for about 2 minutes, while scraping up any browned bits from the skillet.
  5. Return the cooked shrimp to the skillet, tossing to coat them in the sauce. Add the cooked linguine and the remaining 2 tablespoons of butter. Toss everything until well combined and heated through.
  6. Season with salt and pepper to taste. Garnish with freshly chopped parsley and a generous sprinkle of grated Parmesan cheese.
