Ingredients

Scale
  • 8 ounces penne pasta
  • 1 cup heavy cream
  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 4 tablespoons butter, divided
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Boil a large pot of salted water. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the shrimp and cook for 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp and set aside.
  4. In the same skillet, melt the remaining 2 tablespoons of butter. Pour in the heavy cream and bring to a simmer, cooking for 2-3 minutes until slightly thickened. Stir in the shredded mozzarella and grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  5. Add the cooked penne and shrimp to the cheese sauce, tossing gently to coat everything evenly. Transfer the pasta mixture to the prepared baking dish and spread it out evenly.
  6. Bake in the preheated oven for 20-25 minutes, or until the top is bubbly and lightly golden.
  7. Let the bake cool for a few minutes before serving. Garnish with chopped fresh parsley, if desired.
