2 cups cooked rice (preferably day-old)
4–5 garlic cloves, finely chopped
100 g peas (fresh or frozen)
1 tablespoon fish sauce (optional)
2 eggs
300 g chicken breast, cut into small pieces
1 carrot, diced
3 tablespoons soy sauce
2 tablespoons sesame oil (or vegetable oil)
1 onion, chopped
Salt and pepper to taste
Chopped chives or green onions for garnish
Instructions
Have all ingredients prepped and within reach, as this recipe cooks quickly.
Heat 1 tablespoon of sesame oil in a large pan or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through. Remove from the pan and set aside.
In the same pan, add a bit more oil if needed. Sauté the garlic until golden and fragrant. Add the chopped onion and cook until translucent. Stir in the diced carrots and peas, cooking until tender.
Push the vegetables to one side of the pan and crack the eggs into the pan. Scramble until fully cooked, then mix with the vegetables.
Add the cooked rice to the pan, mixing well with the vegetables and eggs. Return the cooked chicken to the pan.
Pour in the soy sauce and fish sauce (if using), and mix thoroughly to coat all ingredients. Stir-fry for a few minutes until the rice is heated through and slightly crispy. Season with salt and pepper to taste.
Serve the garlic chicken fried rice hot on plates. Garnish with chopped chives or green onions for a fresh touch.
