  • 4 large eggs
  • ¾ cup granulated sugar
  • 2 tbsp vegetable oil
  • 2 tbsp buttermilk
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • Gel food coloring: black, purple, teal, and blue
  • 4 oz cream cheese
  • 1 cup powdered sugar
  • 2 cups Cool Whip
  • ½ cup heavy whipping cream
  • 1 cup semi-sweet chocolate chips
  • Black gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly coat it with non-stick spray.
  2. In a small bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat eggs on high speed with an electric mixer until pale yellow (about 3 minutes). Gradually add sugar while continuing to beat. Mix in vegetable oil, buttermilk, apple cider vinegar, and vanilla extract. Fold in the dry ingredients until just combined.
  4. Divide the batter evenly into four bowls. Add a few drops of each gel food coloring to the separate bowls—purple, blue, teal, and black. Stir until the colors are well incorporated.
  5. Drop spoonfuls of each colored batter into the prepared pan, alternating colors and creating swirls with a toothpick or knife.
  6. Bake for 12-13 minutes, or until the cake springs back when lightly touched. While baking, dust a clean towel with powdered sugar.
  7. Immediately turn the hot cake onto the prepared towel. Gently roll the cake with the towel and let it cool completely on a wire rack.
  8. Beat the softened cream cheese and powdered sugar together until fluffy. Fold in the Cool Whip until smooth.
  9. Unroll the cooled cake and spread the filling evenly over the surface, leaving a ½-inch border. Carefully re-roll the cake without the towel, seam side down, and chill in the fridge.
  10. Heat the heavy cream in a small saucepan over low heat until just before boiling. Add a drop of black gel food coloring. Pour the hot cream over chocolate chips in a heatproof bowl. Let sit for 1-2 minutes, then stir until smooth. Allow the ganache to cool to room temperature.
  11. Place the cake roll on a wire rack. Pour the ganache over the cake, spreading it evenly with a spatula. Chill for 20 minutes before slicing.
  12. Slice and enjoy! Store any leftovers covered in the refrigerator.
