  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup salted butter, cubed
  • 1 whole egg
  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 8 ounces cream cheese, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup salted butter, room temperature
  • 1 pound powdered sugar
  • Fresh fruit (berries, kiwi, banana, mandarin oranges)

Instructions

  1. Preheat your oven to 350°F. Lightly grease a half sheet pan or line it with parchment paper.
  2. In a large mixing bowl, cream together the cubed butter and granulated sugar until smooth and fluffy.
  3. Add the egg, vanilla extract, and almond extract to the butter mixture and blend well.
  4. Gradually mix in the flour and baking powder until a soft dough forms.
  5. Roll the dough into balls, each using about 3 tablespoons of dough. Flatten each ball slightly with the bottom of a glass. Chill the dough balls for 5 minutes in the refrigerator.
  6. Bake the cookies for 8-10 minutes, or until the edges are lightly golden. Allow the cookies to cool on the pan for 5 minutes before transferring them to a wire rack to cool completely.
  7. In a separate bowl, beat together the room temperature butter and cream cheese until creamy.
  8. Gradually add the powdered sugar and vanilla extract, mixing until the frosting is smooth and well combined.
  9. Once the cookies have cooled, spread a generous layer of cream cheese frosting on each one.
  10. Decorate with a variety of fresh fruits, such as berries, kiwi slices, banana slices, and mandarin orange segments.
