  • 1 cup buttermilk
  • 2 cups all-purpose flour

  • 1 teaspoon paprika
  • 1 teaspoon garlic powder

  • ½ teaspoon black pepper
  • Vegetable oil, for frying
  • 1 cup finely chopped pickles
  • ¼ cup finely chopped red onion
  • ¼ cup finely chopped red bell pepper
  • 1 tablespoon sugar
  • 1 tablespoon white vinegar
  • ½ teaspoon salt
  • 4 sandwich buns
  • Lettuce leaves
  • Sliced tomatoes
  • Mayonnaise

Instructions

  1. Marinate the chicken in buttermilk for at least 1 hour or overnight.
  2. Whisk together flour, salt, paprika, garlic powder, onion powder, and black pepper.
  3. Dredge marinated chicken in the seasoned flour mixture.
  4. Heat vegetable oil in a skillet or deep fryer to 350°F (175°C).
  5. Fry chicken in batches until golden brown and cooked through, about 6-8 minutes per side.
  6. Combine pickles, red onion, red bell pepper, sugar, white vinegar, and salt to make the pickle relish.
  7. Toast sandwich buns, spread mayonnaise on the bottom half, add fried chicken, pickle relish, lettuce, and tomatoes, then cover with the top half of the bun.
