  • 8 chicken thigh cutlets, skin on
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 cup white wine
  • 1 cup chicken stock
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme leaves
  • 1kg baby potatoes, halved
  • 200g green beans, trimmed

Instructions

  1. Preheat oven to 180°C. Heat olive oil in a large ovenproof pan over medium-high heat. Season chicken with salt and pepper. Cook chicken, skin side down, for 5-7 minutes or until golden. Turn and cook for another 3 minutes. Transfer to a plate.
  2. Add onion and garlic to the pan. Cook, stirring, for 2-3 minutes or until softened.
  3. Pour in white wine and bring to the boil. Cook for 2 minutes or until reduced by half.
  4. Stir in chicken stock, Dijon mustard, and thyme leaves.
  5. Return chicken to the pan, skin side up. Add baby potatoes around the chicken. Transfer the pan to the oven and bake for 45 minutes or until the chicken is cooked through and the potatoes are tender.
  6. Add green beans to the pan for the last 10 minutes of cooking.
  7. Serve hot, garnished with extra thyme leaves if desired.
