2 pounds ground beef
2 large onions, thinly sliced
1 cup beef broth
1 tablespoon olive oil
1/2 cup breadcrumbs
1/2 cup grated Gruyere cheese
2 eggs
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
2 tablespoons butter
Salt and pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, melt butter with olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 20-25 minutes. Pour in beef broth and cook until the mixture is reduced by half. Remove from heat and allow to cool.
In a large bowl, mix together ground beef, breadcrumbs, Gruyere cheese, eggs, minced garlic, Worcestershire sauce, dried thyme, salt, and pepper until well combined.
Fold the cooled caramelized onions into the meat mixture. Shape the mixture into a loaf and place it in a greased baking dish.
Bake the meatloaf for 1 hour, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through.
Let the meatloaf rest for 10 minutes before slicing and serving.
