- 1 package (8.8 ounces) Thai Vermicelli rice noodles
- 1 pound pork chops, cut into bite-sized pieces
- 6 cloves garlic, minced
- 1 medium yellow onion, finely diced
- 1 cup chicken stock
- 2 tablespoons soy sauce
- 1/2 cup sliced carrots
- 2 cups shredded cabbage
- 3 green onions, diced
- Kosher salt and cracked pepper, to taste
- Follow the package instructions to soak the rice noodles until they're pliable.
- Cut the pork chops and vegetables into uniform sizes.
- Heat canola oil in a wok or large sauté pan over medium-high heat. Add pork, and cook until browned. Season with salt and pepper.
- Add the diced onion and minced garlic to the pork. Cook until the onion becomes translucent.
- Pour in the soy sauce and chicken stock, stirring to combine.
- Add the shredded cabbage, sliced carrots, and diced green onions. Cook until the vegetables are tender.
- Add the soaked noodles to the pan, tossing to combine everything evenly. Adjust seasoning with salt and pepper as needed.
