1 lb chorizo sausage (casing removed)
2 cloves garlic, minced
1/4 cup chopped fresh cilantro
1 teaspoon ground cumin
1 teaspoon paprika
1 onion, finely chopped
1 green bell pepper, finely chopped
1 red bell pepper, finely chopped
Salt and pepper to taste
2 packages (about 15 oz each) refrigerated pie crusts or homemade empanada dough
1 egg, beaten (for egg wash)
Instructions
In a large skillet, cook chorizo sausage over medium heat, breaking it up with a spoon until browned and cooked through. Remove from the skillet and drain on paper towels.
In the same skillet, add onion, green bell pepper, and red bell pepper. Cook until softened, about 5-7 minutes. Add minced garlic, ground cumin, paprika, and salt and pepper to taste. Cook for an additional 2-3 minutes until fragrant.
Return the cooked chorizo to the skillet and stir in chopped fresh cilantro. Remove from heat and let the filling cool slightly.
Preheat the oven to 375°F (190°C). Roll out the pie crusts or empanada dough on a lightly floured surface. Use a round cutter or small bowl to cut out circles about 4-5 inches in diameter.
Place a spoonful of the filling in the center of each dough circle. Fold the dough over the filling to form a half-moon shape. Press the edges together with a fork to seal. Arrange the empanadas on a baking sheet lined with parchment paper.
Brush the empanadas with beaten egg for a golden crust. Bake for 20-25 minutes, or until golden brown and crispy.
Allow the empanadas to cool slightly before serving. Enjoy them warm or at room temperature.
