This creamy and zesty pasta salad combines the classic flavors of deviled eggs with pasta for a delicious side dish. Perfect for gatherings, it features hardboiled eggs, a tangy dressing, and optional crispy bacon for added flavor.

  • 6 hardboiled eggs
  • 8 ounces ditalini, small penne, or elbow macaroni
  • ¾ cup mayonnaise
  • 1 ½ tablespoons Dijon mustard
  • 1 teaspoon white vinegar or fresh lemon juice
  • 1 clove garlic, finely minced or crushed to a paste
  • ½ teaspoon kosher salt
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons green onions, chopped
  • ¼ cup cooked and crumbled bacon (optional)

Instructions

  1. Boil the pasta according to the package instructions, adding a pinch of salt to the water. Drain and rinse under cold water until cooled.
  2. Peel the hardboiled eggs and separate the yolks from the whites. Chop the egg whites and set aside. Crush or press the egg yolks through a fine sieve into a large mixing bowl.
  3. To the bowl with the egg yolks, add mayonnaise, Dijon mustard, vinegar, garlic, salt, smoked paprika, and cayenne pepper. Whisk until smooth and well combined.
  4. Add the cooled pasta to the dressing and stir until evenly coated.
  5. Fold in the chopped egg whites, red onion, and green onions. If using, sprinkle in the crumbled bacon.
  6. Garnish with extra green onions and a dash of paprika if desired. Serve immediately or chill in the refrigerator until ready to serve.
