2 cups heavy whipped cream, very cold
2 puff pastry sheets
13 oz dulce de leche
56 oz sour cherries in syrup (juice drained)
Instructions
Preheat your oven to 400°F. Line two 8-inch baking pans with parchment paper. Roll out the puff pastry sheets and slice each into 3-inch wide strips.
Drain the sour cherries thoroughly. Place them tightly next to each other along the length of the dough strips. Seal the edges to prevent any juice from leaking out during baking.
Spiral the cherry-filled dough strips into the prepared baking pans to form circular cake shapes. Bake in the preheated oven for 25 minutes or until the pastry is golden brown. Transfer the baked pastries to a wire rack to cool completely.
In a large mixing bowl, combine the cold heavy cream with the dulce de leche. Whip the mixture until stiff peaks form.
On a serving plate, spread a layer of the whipped cream mixture. Place one of the cooled pastry layers on top, then add more cream. Top with the second pastry layer and finish with the remaining cream. Decorate with any leftover cherries and chill the assembled cake overnight in the refrigerator to set.
