5 large eggs
1/4 cup all-purpose flour
5 to 6 ounces fresh spinach
1/4 teaspoon onion powder
1/2 cup onion, finely chopped
1 1/4 cups low-fat milk
1 pinch sweet paprika (optional)
4 slices thick-cut bacon, finely diced
1 cup shredded Cheddar or Cheddar Jack cheese blend
1/4 teaspoon freshly ground black pepper
1 large egg white
3/4 teaspoon salt
1 pinch dried oregano leaves
Instructions
Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish or quiche pan with cooking spray.
In a skillet over medium heat, cook the diced bacon until crisp. Remove bacon and set aside. In the same skillet with the bacon drippings, sauté the chopped onion until translucent. Set aside.
Rinse the fresh spinach thoroughly and remove any tough stems. Roughly chop the spinach.
In a large mixing bowl, whisk together the eggs, egg white, milk, flour, salt, pepper, onion powder, oregano, and optional paprika. Stir in the cooked bacon, sautéed onion, chopped spinach, and shredded cheese.
Pour the mixture into the prepared pie dish or quiche pan. Bake for 30-35 minutes, or until the quiche is set and the top is lightly golden.
