  • 1 cup shredded cheddar cheese
  • 1 lb ground beef (or ground turkey)
  • 1 cup beef broth
  • 4 cups frozen diced potatoes
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 2 cups shredded mozzarella cheese
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp salt

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté until the vegetables are tender.
  3. Place half of the frozen diced potatoes in the bottom of the crockpot. Layer with half of the cooked beef mixture and half of the shredded cheddar and mozzarella cheeses. Repeat with the remaining potatoes, beef mixture, and cheeses.
  4. In a small bowl, whisk together the beef broth, Worcestershire sauce, salt, pepper, and paprika. Pour this mixture evenly over the layers in the crockpot.
  5. Cover the crockpot and cook on low for 4-6 hours, or until the potatoes are tender and the cheese is melted and bubbly.
  6. Scoop out the casserole and serve hot.
