250g baby spinach leaves
200g feta cheese, crumbled
200g mozzarella cheese, grated
3 garlic cloves, minced
200ml thickened cream
1 tsp ground nutmeg
Salt and pepper to taste
4 large flour tortillas or Turkish flatbreads
Olive oil for brushing
Instructions
Heat a large pan over medium heat. Add the spinach and cook until wilted. Remove from heat, drain excess liquid, and chop finely. In a mixing bowl, combine spinach, feta cheese, mozzarella, minced garlic, thickened cream, nutmeg, salt, and pepper. Mix thoroughly.
Lay one tortilla or flatbread on a clean surface. Spread one-fourth of the spinach and cheese mixture over half of the tortilla, leaving a small border.
Fold the tortilla in half to enclose the filling. Press edges firmly to seal. Heat a large non-stick pan over medium heat. Brush with olive oil. Cook each gozleme for 3-4 minutes on each side until golden brown and crisp. Repeat with remaining tortillas.
Cut each gozleme into slices. Serve warm with lemon wedges and a fresh salad on the side.
