  • 1 (14 oz) kielbasa, sliced and halved
  • 1 medium sweet onion, sliced and halved
  • 6 medium potatoes, peeled, washed, and sliced thin (about 1/4 inch)
  • 2 cups shredded cheddar cheese
  • 3 1/2 tablespoons butter
  • 4 1/2 tablespoons flour
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/4 teaspoon dried thyme
  • 1/2 – 3/4 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 tablespoon oil

Instructions

  1. Heat oil in a medium skillet over medium-high heat. Add kielbasa and onions, stirring occasionally until sausage caramelizes and onions soften. Set aside.
  2. In a medium saucepan over medium heat, melt butter. Add flour to make a paste and cook for 1-1.5 minutes to remove the raw flour taste. Slowly whisk in chicken broth, then add cream, milk, thyme, salt, and pepper. Stir until the sauce thickens. Adjust seasoning to taste.
  3. Preheat oven to 350°F (175°C). In a 4-quart casserole dish, ladle enough sauce to cover the bottom. Layer half the potatoes, half the kielbasa and onion mixture, and half the cheese. Repeat layers, ending with cheese. Cover and bake for 45 minutes. Remove foil and bake for another 40 minutes or until potatoes are fork-tender.
  4. Serve with your favorite vegetables and crusty bread.
