This creamy gnocchi and chicken skillet is a comforting one-pan meal that combines tender chicken thighs, fluffy gnocchi, and fresh spinach in a rich, flavorful sauce. Perfect for a weeknight dinner, it’s easy to prepare and sure to please the whole family.

Ingredients

  • 1 pound potato gnocchi, cooked and drained
  • 1.5 pounds boneless, skinless chicken thighs
  • 1.5 teaspoons paprika
  • 5 tablespoons butter or ghee
  • 1 medium yellow onion, diced
  • 1 cup white mushrooms, diced
  • 2 tablespoons minced garlic
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth
  • 1/2 cup half and half
  • 1/2 cup shredded mozzarella
  • 3 cups spinach
  • Red pepper chili flakes, shredded parmesan and parsley, for serving

Instructions

  1. Season chicken thighs with salt, pepper, and paprika.
  2. In a large skillet, melt 2 tablespoons of butter over medium-high heat and cook the chicken for about 5-10 minutes per side until golden brown. Remove and set aside.
  3. Melt the remaining 3 tablespoons of butter in the skillet. Add garlic, Italian seasoning, onion, and mushrooms, and sauté until tender.
  4. Whisk in chicken broth and bring to a simmer. Gradually add cream, continuing to whisk. Stir in mozzarella until the sauce thickens slightly.
  5. Mix in the cooked gnocchi and spinach, seasoning with additional salt and pepper if needed.
  6. Return the chicken to the skillet, simmering for 2 minutes to reheat. Garnish with parsley, parmesan, and red pepper chili flakes.
