1 cup chopped onion
1 pound ground beef
16 ounces refried beans
10 large flour tortillas, halved
2 cups shredded mild cheddar cheese
1 cup shredded pepper jack cheese
10.5 ounces condensed cream of chicken soup
¾ cup sour cream
1 ounce taco seasoning
¼ cup chopped cilantro
1 lime
Instructions
Cook ground beef and onion in a heavy pan until beef is cooked through and onion is tender. Drain excess fat and stir in refried beans and taco seasoning. Squeeze lime over the mixture, add cilantro, and stir to combine. Set aside.
Preheat oven to 350°F. Spray a 13×9-inch baking dish with nonstick cooking spray. In a large bowl, mix together cream of chicken soup and sour cream. Spread some of the sour cream mixture onto the bottom of the baking dish. Layer tortilla halves over the mixture, ensuring even coverage. Spread a layer of the beef mixture over the tortillas. Top with a cup of shredded cheese. Repeat layers, ending with a final layer of cheese on top.
Bake for 20 minutes or until heated through. If refrigerated, it may take up to 30 minutes. Let stand for 5 to 10 minutes before serving.
