1 onion, chopped
1 stalk celery, chopped
2 cups chicken broth
2 cups milk
1 cup half-and-half cream
1/4 cup cornstarch
1/4 cup water
2 1/2 cups chopped fresh broccoli
2 cups shredded Cheddar cheese
Salt and pepper to taste
Instructions
In a stockpot, melt butter over medium heat. Cook onion and celery in butter until tender, stirring frequently.
Add broccoli and broth. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.
In a separate saucepan, whisk together milk, half-and-half, and cornstarch until smooth. Stir into soup, and cook until thickened, about 10 minutes.
Stir in cheese until melted and season with salt and pepper. Serve hot.
