1 sheet puff pastry, thawed
4 oz cream cheese, softened
1 cup fresh spinach, chopped
1/4 cup grated Parmesan cheese
1 egg, beaten
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, mix softened cream cheese, chopped spinach, and Parmesan cheese. Season with salt and pepper.
Roll out puff pastry on a lightly floured surface and cut into 9 equal squares. Spoon spinach and cream cheese mixture into the center of each square. Fold corners towards the center, pinching edges to seal and form puffs.
Place puffs on prepared baking sheet and brush tops with beaten egg. Bake for 15-20 minutes until pastry is golden brown and puffed.
