This comforting meatloaf combines lean ground beef with crushed Ritz crackers, cheese, and a flavorful topping of ketchup, brown sugar, and mustard. It’s a hearty dish that’s perfect for family dinners.

Ingredients

Scale
  • 2 pounds lean ground beef
  • 48 Ritz crackers, crushed
  • 4 ounces shredded sharp cheddar or Colby cheese
  • 3 eggs
  • ½ cup milk
  • 1 small finely diced onion
  • ½ cup finely diced bell pepper (optional)
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½¾ cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon mustard

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C).
  2. Prepare Topping: In a small bowl, mix together the ketchup, brown sugar, and mustard. Set aside for later.
  3. Mix Meatloaf: In a large bowl, combine the eggs, crushed Ritz crackers, shredded cheese, milk, onion, bell pepper (if using), salt, and black pepper. Stir until well mixed.
  4. Add Beef: Gently fold in the ground beef until just combined. Be careful not to overmix to keep the meatloaf tender.
  5. Shape and Bake: Transfer the mixture into a greased and lined loaf pan, shaping it into a loaf. Bake for 30 minutes.
  6. Add Topping: Spread the ketchup mixture evenly over the meatloaf. Return to the oven and bake for an additional 30-40 minutes, or until the internal temperature reaches 155°F (68°C).
  7. Cool and Serve: Let the meatloaf cool for 15 minutes before slicing. Serve and enjoy!
