48 Ritz crackers, crushed
4 ounces shredded sharp cheddar or Colby cheese
3 eggs
½ cup milk
1 small finely diced onion
½ cup finely diced bell pepper (optional)
1 teaspoon salt
¼ teaspoon black pepper
½–¾ cup ketchup
2 tablespoons brown sugar
1 teaspoon mustard
Instructions
Preheat Oven: Set your oven to 350°F (175°C).
Prepare Topping: In a small bowl, mix together the ketchup, brown sugar, and mustard. Set aside for later.
Mix Meatloaf: In a large bowl, combine the eggs, crushed Ritz crackers, shredded cheese, milk, onion, bell pepper (if using), salt, and black pepper. Stir until well mixed.
Add Beef: Gently fold in the ground beef until just combined. Be careful not to overmix to keep the meatloaf tender.
