Collard greens are a nutritious and flavorful leafy green vegetable, often cooked with savory ingredients like bacon and garlic. This dish is hearty and perfect as a side or main course, providing a delicious way to enjoy this Southern staple.

Ingredients

Scale
  • 1 bunch of fresh collard greens
  • 4 slices of beef bacon, chopped
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 2 cups chicken broth
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Wash the collard greens thoroughly. Remove the tough stems and chop the leaves into bite-sized pieces.
  2. In a large pot over medium heat, cook the chopped beef bacon until crispy. Add diced onions to the pot and sauté until softened. Stir in minced garlic and red pepper flakes, cooking for an additional minute. Place the chopped collard greens into the pot, stirring to combine with the bacon and aromatics.
  3. Pour in the chicken broth, ensuring it covers the collard greens. Bring the mixture to a simmer. Reduce heat to low, cover, and let it simmer for about 45 minutes or until the collard greens are tender. Season with salt and pepper to taste.
  4. Just before serving, stir in apple cider vinegar for a tangy kick.
