4 cups strong brewed coffee
1/4 cup sugar
1/4 cup brown sugar
1 (1.75 ounce) package powdered pectin
Instructions
In a large pot, combine brewed coffee, sugar, and brown sugar. Stir well and bring to a boil over medium heat.
Once boiling, stir in powdered pectin and cook hard for 1 minute, stirring constantly.
Remove from heat and skim off any foam using a metal spoon.
Ladle the hot jelly into sterilized jars, leaving about 1/4 inch headspace. Wipe jar rims and seal with lids and bands.
Place jars in a boiling water bath for 10 minutes. Adjust time for altitude if needed.
Remove jars from water bath and let cool on a kitchen towel. Check seals after 24 hours.
