1/2 cup cherry tomatoes, halved
Juice of 1 lemon
Fresh parsley, chopped for garnish
Salt and pepper, to taste
2 tablespoons unsalted butter
1 teaspoon lemon zest
2 cloves garlic, minced
1/2 cup heavy cream
4 cod fillets
2 tablespoons olive oil
1/2 teaspoon red pepper flakes (optional)
Instructions
Season the cod fillets with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and cook until golden on both sides and cooked through, about 3-4 minutes per side. Remove from skillet and set aside.
In the same skillet, reduce the heat to medium and melt the butter. Add minced garlic and sauté until fragrant, about 1 minute. Stir in heavy cream, lemon juice, and lemon zest. Simmer until the sauce starts to thicken. Add cherry tomatoes and red pepper flakes (if using). Cook for an additional minute.
Return the cod to the skillet, spooning the sauce over the fish. Cook for another minute to reheat the cod. Garnish with chopped parsley before serving.
