1 cup unsalted butter
60 saltine crackers
1 cup light brown sugar, packed
12 ounces semi-sweet chocolate chips
Sprinkles (optional)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with foil, covering the bottom and sides completely.
Place the saltine crackers in a single layer on the foil-lined baking sheet. Break crackers into smaller pieces if needed to fill the pan completely.
In a medium saucepan, melt the butter over medium-high heat. Stir in the brown sugar and cook, stirring constantly, until the sugar is dissolved. Bring to a boil and let it cook for 3 minutes without stirring.
Pour the butter mixture evenly over the crackers. Use a rubber spatula to spread and cover all the crackers.
Bake in the preheated oven for 5 minutes.
Remove from the oven and immediately sprinkle the chocolate chips over the hot toffee. Let the chocolate sit for 2-3 minutes to soften. If needed, return to the oven for an additional minute.
Once the chocolate is melted, use an offset spatula or the back of a spoon to spread it evenly over the toffee. Add sprinkles if desired.
Allow the toffee to cool completely. For quicker cooling, place the baking sheet in the refrigerator. Once cooled and hardened, break into pieces and enjoy!
