300 g all-purpose flour
120 g hot water
45 g room-temperature water
2 tablespoons neutral cooking oil
1 teaspoon sesame oil
¼ teaspoon ground Sichuan pepper
1 tablespoon minced ginger
¼ teaspoon ground white pepper
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
300 g ground pork
6 stalks scallions
4 tablespoons water
Instructions
Combine flour, hot water, room-temperature water, and cooking oil in a mixing bowl. Stir with chopsticks until a rough dough forms. Knead the dough until smooth, then cover and let it rest for 20 minutes. Divide into 8 equal portions, shape into balls, and let rest for another 10 minutes.
In a bowl, mix ground pork, scallions, ginger, light soy sauce, dark soy sauce, sesame oil, Sichuan pepper, white pepper, and water until sticky.
Flatten a dough ball into a ½ cm thick disc. Place ⅛ of the filling in the center. Pleat and seal the edges to form a pie. Repeat for remaining dough and filling.
Heat cooking oil in a skillet over low heat. Place pies in the skillet, flatten to 2½ cm thick, and fry until golden on both sides, covering with a lid to cook through.
