  • 1 ½ cups chicken broth
  • ¼ teaspoon salt
  • 8 strips bacon, uncooked, chopped
  • 2 lb chicken breasts, boneless, skinless
  • ⅓ cup Dijon mustard
  • ¼ teaspoon paprika
  • 1 cup onion, chopped
  • ⅛ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a small bowl, mix together the Dijon mustard, paprika, salt, and black pepper to create a paste. Evenly coat the chicken breasts with this paste and set aside.
  2. In a large skillet, cook the chopped bacon over medium-high heat until it begins to brown. Remove the bacon and set aside, leaving a small amount of bacon fat in the skillet.
  3. Add the chopped onion to the skillet and cook in the remaining bacon fat until softened. Remove the onions and set them aside with the bacon.
  4. Add the olive oil to the now empty skillet and heat over medium. Cook the mustard-coated chicken breasts for about 1.5 minutes on each side, until lightly browned but not fully cooked.
  5. Remove the chicken from the skillet. Pour the chicken broth into the skillet, bring to a boil, and scrape the bottom to release any flavorful bits.
  6. Return the bacon and onions to the skillet, mixing well.
  7. Place the chicken breasts back into the skillet. Reduce the heat to low-medium and cook for 15-20 minutes, turning the chicken once, until the chicken is fully cooked and no longer pink in the center.
