  • 4 large bone-in, skin-on chicken thighs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 pound sweet or hot Italian sausages
  • 1 large sweet onion, cut into strips
  • 2 red bell peppers, cut into strips
  • 6 cloves garlic, sliced
  • 1 stem fresh rosemary, leaves chopped
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup dry white wine
  • 1/4 cup brine from pickled peppers
  • 1 cup whole pickled peppers
  • 1 pound gold potatoes, cut into wedges

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Season chicken thighs with salt and pepper. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear chicken until golden on both sides, then transfer to a plate.
  3. Brown sausages in the same pot until cooked through. Transfer to the plate with the chicken.
  4. In the same pot, sauté onion, bell peppers, garlic, and rosemary until onions soften and become translucent.
  5. Pour in chicken broth, white wine, and pickled pepper brine. Simmer for 5 minutes to combine flavors.
  6. Return seared chicken thighs and sausages to the pot. Add potatoes and whole pickled peppers. Cover the pot and bake in the preheated oven for 45 minutes, or until chicken is fully cooked and potatoes are tender.
