1 pound chicken breasts, cut into cubes
8 ounces penne pasta, cooked al dente
1/3 cup grated Parmesan cheese
1 tablespoon Italian seasoning
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/3 cups shredded mozzarella cheese, divided
24 ounce jar marinara sauce
Fresh basil for topping
Instructions
Preheat the oven to 350 degrees Fahrenheit. Lightly spray a 9×13 inch baking dish with cooking spray.
In a large pot of salted boiling water, cook the penne pasta according to package directions until al dente. Drain well and transfer to a large bowl.
Pour 3/4 of the marinara sauce over the cooked pasta. Add Italian seasoning, salt, pepper, and garlic powder. Stir well to combine.
Transfer the pasta mixture to the prepared baking dish. Layer 1 cup of shredded mozzarella cheese over the pasta. Arrange the cubed chicken evenly on top. Pour the remaining marinara sauce over the chicken.
Sprinkle the remaining shredded mozzarella cheese and grated Parmesan cheese over the casserole. Bake in the preheated oven for 30-35 minutes, until the chicken is cooked through and the cheese is bubbly and golden.
Remove from the oven and let the casserole rest for a few minutes. Garnish with fresh basil leaves before serving.
