This Chicken Parmesan Casserole is a hearty and delicious dish that combines tender chicken strips, rich pasta sauce, and a blend of cheeses, all baked to perfection. It’s a comforting meal that’s perfect for family gatherings or weeknight dinners.

  • 1/3 cup Parmesan cheese
  • 1 cup mozzarella cheese
  • 32 oz. pasta sauce
  • 1/2 inch thick chicken strips
  • 1.5 cups breadcrumbs
  • 3/4 cup flour
  • 2 whisked eggs
  • 2 tsp seasoned salt
  • 1/4 tsp pepper
  • 1 package rigatoni pasta
  • 1/4 inch oil
  • 2 tbsp butter

Instructions

  1. Boil water and cook the rigatoni for 1 minute less than al dente. Drain and toss with pasta sauce, 1/3 of the Parmesan cheese, and 1 cup of mozzarella. Set aside.
  2. Pat chicken dry, cut into strips, and set up a breading station with flour mixture, whisked eggs, and breadcrumbs. Dredge chicken, fry in oil and butter until golden brown, then slice into bite-sized pieces.
  3. Preheat oven to 375°F. Grease a casserole dish, layer half of the pasta, half of the chicken, 1/3 of the Parmesan, and 1 cup of mozzarella. Add remaining pasta and chicken, top with remaining cheeses. Bake uncovered for 25 minutes, then increase heat to 425°F for an additional 5 minutes.
