Chicken Madeira is a delicious dish featuring tender chicken breasts cooked in a rich Madeira wine sauce with sautéed mushrooms, onions, and garlic. Topped with melted mozzarella cheese and served with blanched asparagus, this meal is perfect for a special occasion or a comforting dinner.

  • 1 pound chicken breast (thinly sliced)
  • 1 Tablespoon Italian seasoning
  • Salt and pepper
  • 2 Tablespoons olive oil (divided)
  • 1 small onion (diced)
  • 8 ounces mushrooms (sliced)
  • 3 cloves garlic (diced)
  • 2 Tablespoons flour
  • 2 cups Madeira wine
  • 1 cup beef broth
  • 1 pound asparagus
  • 1 cup mozzarella cheese (shredded)

Instructions

  1. Fill a large skillet with 2 inches of water and bring to a boil. Add the asparagus and blanch for 2-3 minutes. Remove and drain the asparagus, then place in an ice bath to cool.
  2. Sprinkle Italian seasoning, salt, and pepper on both sides of the chicken breast. Heat 1 tablespoon of olive oil in the skillet over medium-high heat. Cook the chicken for 5-6 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil, onion, mushrooms, and garlic. Cook for 2-3 minutes or until the vegetables are almost tender. Sprinkle the flour over the vegetables and stir until they are coated.
  4. Pour in the Madeira wine and bring to a boil. Simmer until the liquid is reduced by half, about 5 minutes. Add the beef broth and continue to simmer until the sauce starts to thicken.
  5. Return the chicken to the skillet and add the asparagus. Top with shredded mozzarella cheese. Transfer the skillet to the oven and broil until the cheese is melted and bubbly.
  6. Serve the Chicken Madeira over mashed potatoes if desired.
