Chicken Katsu is a delicious Japanese dish featuring breaded and fried chicken served with a rich and flavorful katsu sauce. The crispy chicken is complemented by a savory sauce made with garlic, onion, and spices, making it a satisfying meal perfect for any occasion.

  • 200g panko breadcrumbs
  • 100g plain flour
  • 4 boneless, skinless chicken breasts
  • 2 large eggs, beaten
  • Vegetable oil, for frying
  • 2 tbsp vegetable oil (for sauce)
  • 2 garlic cloves, minced
  • 1 large carrot, grated
  • 1 onion, finely chopped
  • 100ml coconut milk
  • 500ml chicken stock
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp curry powder
  • 1 tbsp garam masala
  • 1 tbsp turmeric
  • 2 tbsp plain flour (for sauce)
  • 1 tbsp tomato puree
  • Steamed rice (for serving)
  • Pickled radishes or pickled ginger (optional)
  • Fresh coriander, chopped (optional)

Instructions

  1. Prepare the Katsu Sauce by heating vegetable oil in a pan, adding onion, garlic, and carrot, then mixing in spices and liquids, and simmering until thickened.
  2. Set up a breading station with flour, beaten eggs, and panko breadcrumbs. Season chicken and coat each breast.
  3. Fry the breaded chicken in vegetable oil until golden brown and cooked through, then drain on paper towels.
  4. Slice the chicken and serve over steamed rice, topped with katsu sauce and garnished with optional ingredients.
