  • 4 beef cube steaks
  • 2 cups all-purpose flour (for coating)
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour (for gravy)
  • 2 cups whole milk
  • 2 teaspoons salt (divided)
  • 1 teaspoon black pepper (divided)
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. In a shallow dish, combine 2 cups flour, 1 teaspoon salt, 1 teaspoon black pepper, paprika, garlic powder, and onion powder.
  2. In another dish, whisk together eggs and buttermilk.
  3. Dredge each cube steak in the seasoned flour, then dip in the egg mixture, and coat again with the seasoned flour.
  4. Heat vegetable oil in a large skillet over medium heat. Fry the steaks for 3-4 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate to drain.
  5. In the same skillet, drain excess oil, leaving about 1/4 cup drippings. Add 1/4 cup flour to the drippings and whisk until lightly browned. Gradually whisk in whole milk, stirring constantly until the gravy thickens. Season with the remaining 1 teaspoon salt and 1 teaspoon black pepper to taste.
  6. Pour the gravy over the chicken fried steaks and serve hot.
