This Chicken Cordon Bleu Meatloaf combines the classic flavors of chicken, ham, and Swiss cheese in a hearty meatloaf.   • 2 lbs ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Dijon mustard
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 6 slices Swiss cheese
  • 6 slices chicken ham (or regular ham)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, milk, Dijon mustard, eggs, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. On the prepared baking sheet, shape half of the chicken mixture into a loaf.
  4. Layer the chicken ham slices on top of the loaf, then add the Swiss cheese slices.
  5. Spread the remaining chicken mixture over the ham and cheese, shaping it into a loaf to encase the filling.
  6. Bake in the preheated oven for 55-60 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Let the meatloaf rest for 10 minutes before slicing and serving.
